Breakfast Casserole


1 lb pork breakfast sausage 
12 eggs, whisked 
2 Tbsp water 
1 cup frozen pepper and onion mix 
½ cup frozen spinach, chopped
1 tsp salt
½ tsp pepper
¼ tsp cinnamon
Nonstick cooking spray


Preheat oven to 375°F. Cook sausage over medium high heat until cooked through, crumbling meat, and drain grease. Spray 9 x12 pan with nonstick cooking spray. In bowl, add water, frozen peppers and onion mix, chopped spinach, salt, pepper and cinnamon to whisked eggs. Spread cooled cooked sausage in 9 x 12 pan evenly, and pour egg mixture over sausage. Bake 25-30 minutes, or until eggs are set.
