Broccoli Cornbread


  • 2 boxes cornbread mix 
  • 4 eggs 
  • 10 oz chopped broccoli, thawed 
  • 10 oz cottage cheese 
  • 1 small onion, chopped 
  • 2 sticks butter or margarine 


Melt butter into the bottom of a 9x13 pan; set aside. Mix ingredients other than butter together and pat into the pan with melted butter on the bottom. Butter should spread to top of batter. Bake at 350° until top turns golden brown. Refrigerate any leftovers.
