Coconut Delight Bars


½ cup margarine or butter 
2 large eggs 
1 cup granulated sugar (heaping cup) 
7 ½-oz bag of coconut
1 cup Nestles semi-sweet chocolate morsels


Line an 8x8 pan with heavy duty foil, making sure to bring foil up and over each side. Sprinkle the chocolate chips in pan and place in a 300ºF oven for approximately 5 minutes to melt the chips. Spread evenly on bottom of pan with a rubber spatula. Allow the chocolate to cool for a few minutes. Melt margarine/butter in a medium bowl in a microwave oven on high. Add ingredients 1 through 4 and mix well. Spread mixture over hardened chocolate layer.

Bake in a 375ºF oven for approximately 25 minutes or until coconut is lightly browned. Allow the bars to cool for a while and cut while still in the pan. Then put the pan in the refrigerator so the chocolate will finish hardening. Lift the bars out by pulling up on the edges of the foil. Finish cutting into bars if necessary
