- 2 Tbsp yeast dissolved in 1/2 very warm water
- 1/2 cup sugar
- 1/2 cup sweet cream, scalded (you may use milk instead, but your donuts will not turn out as light and fluffy)
- 1 egg
- 1/2 tsp nutmeg
- 1/2 tsp salt
- About 1 cup flour*
Mix first six ingredients and add about one cup flour. Let the dough sit until it forms a light sponge texture – just a few minutes. Add enough flour to stiffen but not as stiff as bread (see note below). Let rise until double. Roll and cut; let rise again. Fry in hot oil until golden.
*There is no exact amount for flour, just add until dough comes together to form a sticky, not smooth, and elastic like bread dough.
