Easter Cookies


  • 2 cups all-purpose flour 
  • 1 tsp baking powder 
  • 1/4 tsp salt 
  • 1 cup granulated sugar 
  • 1/2 cup butter or margarine, softened 
  • 2 tsp vanilla extract 
  • 1 egg  
  • 2 cups (12 oz) semi-sweet chocolate chips, divided 
  • food coloring 
  • 1 to 2 (15 oz) containers vanilla frosting
  • 1-1/2 cups (9 oz) rainbow morsels 
  • colored sugars


Preheat oven to 350°F. In small bowl combine flour, baking powder and salt. In large mixing bowl cream sugar, butter and vanilla. Beat in egg. Beat in dry ingredients. Stir in one cup semi-sweet chocolate chips. Press enough dough into greased and floured tablespoon to make slightly rounded. Invert onto ungreased baking sheet. Continue with remaining dough. Bake 12 to 14 minutes or just until golden around edges. Cool for two minutes. Remove to wire racks to cool completely. 

Color frosting using food coloring and frost cookies. Decorate with chocolate chips, rainbow morsels & colored sugars.
