Lasagna

Ingredients

2 lbs ground beef 
1 sweet onion, diced 
2 tsp minced garlic
1 jar pasta sauce (your preference) 
1 can diced tomatoes 
2 cans tomato paste
1 bell pepper, diced
1 tsp sweet basil 
1 tsp chili powder
1 tsp sugar 
3 tsp paprika 
1 container ricotta cheese
1 large bag of mozzarella cheese
1 box of lasagna noodles

Directions

Heat large skillet over medium-high heat. Add ground beef, breaking it apart with a wooden spoon. Add onion and garlic. Cook until meat is browned, about 6-8 minutes. Drain the fat from the meat and return the meat to the skillet. Add tomato sauce, diced tomatoes, tomato paste, bell pepper, sugar, chili powder, paprika, and sweet basil. Stir well until combined. Cover and reduce the heat to low, allowing the meat sauce to simmer for 30 minutes. As the meat sauce cooks, make the ricotta mixture. In a large bowl add ricotta and 1 cup of mozzarella cheese. Stir well until incorporated. Cook the pasta al dente, according to package instructions. In a 13x9 baking dish, add a thin layer of meat sauce (about ¼ cup). Layer 3 lasagna noodles, ⅓ of ricotta mixture, and 1 ½ cups of meat sauce. Repeat the layers twice. Top with the final layer of noodles, sauce, and mozzarella cheese. Cover the baking dish with aluminum foil and bake at 350oF for 1 hour or until hot.
