Mini Mexican Meat Loaf


  • 1 pound extra lean ground beef
  • 1 package of Stove Top stuffing (6 oz.)
  • 1 cup water
  • 2 teaspoons chili powder
  • Salsa
  • Mexican style shredded cheese


Take one pound extra lean ground beef, one package Stove Top stuffing mix (6 oz.), one cup water, and two teaspoons of chili powder. Mix together in a bowl and press into 12 muffin cup pans sprayed with cooking spray. Make an indentation in the center of each with a spoon. Spoon a little bit of salsa into the center of each meatloaf, and bake at 375°F for 30 minutes, or until meatloaves are cooked through. Top with Mexican style cheese, and continue baking for 5 minutes or until cheese is melted.
