Pineapple Dream Dessert


  • 2 cups powdered sugar  
  • 1/2 cup unsalted butter (soft) 
  • 4-oz cream cheese (soft)  
  • 20-oz can crushed pineapple, drained 
  • 8-oz Cool Whip®
  • 2-1/2 cups graham crackers (2 sleeves), crushed
  • 1/2 cup unsalted butter 


Preheat oven to 300°F. Melt butter and mix with graham cracker crumbs. Press 2 cups of mixture into a 9x9” pan and bake for 8-10 minutes; cool. Beat cream cheese and butter together. Turn mixer to low and add powdered sugar one cup at a time until incorporated. Add heaping tablespoon of pineapple and mix; spread this over the cooled crust. Fold remaining pineapple to cool whip and spread over cream cheese mixture. Sprinkle with remaining graham cracker mixture. Refrigerate for at least 4 hours.
