Potato Skins


4 potatoes, baked 
8-oz grated cheddar cheese 
1 cup sour cream
2 Tbsp chopped green onions


Cut potatoes into quarters. Scoop potatoes out of skin. Spray potato skins with cooking spray and place on baking pan. Bake at 425ºF for 10 minutes. Turn and bake an additional 5-8 minutes. Remove from oven and place cheese, sour cream, and onions on each quarter. Return to oven and bake until cheese melts.
