Sheila’s Christmas Fudge


  • 3 cups sugar 
  • 1 cup milk 
  • 1/4 teaspoon cream of tarter 
  • 4 tablespoons cocoa 
  • 1/2 teaspoon salt 
  • 2 tablespoons butter 
  • 1 teaspoon vanilla 
  • 1 cup chopped pecans 


Place sugar, cream of tarter and milk in a pan and bring to boiling point, stirring constantly. Wipe the crystals from the edge of the pan. Add cocoa and cook to the soft boil stage (when a drop dropped in a cup of cold water forms a soft ball). Remove from heat and add salt, butter and vanilla, but do not stir. Set in cool place. When nearly cool, beat until thick enough to hold its shape. Add nuts and turn onto platter. Shape with hands into long roll and slice.
