Squash Casserole

Ingredients

  • 1 cup milk
  • 3 eggs, beaten
  • 1-1/2 cups cooked yellow squash
  • 1/2 cup onion, chopped
  • 1 cup grated cheddar cheese
  • 1 cup cracker crumbs
  • 1 teaspoon pimento
  • 1/2 teaspoon parsley flakes

Directions

Preheat oven to 350°F. Combine milk and eggs in a large mixing bowl. Add squash, onion, cheese, cracker crumbs, pimento, and parsley. Bake in a greased baking dish for 25 minutes. Serve warm. Serves six.
